The Full Coating Process

Breading and coating is one of the most versatile processes in food manufacturing. Starting from a dry pre-dust layer that improves batter adhesion, liquid batter is applied either by dip-coating or curtain-coating depending on the desired texture and product type. Automated replenishers and mixers maintain consistent batter concentration throughout a production run.

The dry crumb layer — applied by a breader or tunnel breader — seals the batter and creates the final texture. CMK offers complete line configurations for both tempura-style (light batter, no breadcrumbs) and Western-style breading (full crumb coating), covering the full range from delicate seafood to formed potato products.
