  1. 01 Feeding

    Raw scallop enters via the feeding conveyor for steady, batched infeed.

  2. 02 Washing

    A rotary drum washer tumbles the product to remove sand, shell fragments, and surface debris.

  3. 03 Cooking

    Blanching and steaming run in sequence, setting the texture and loosening the shell from the meat.

  4. 04 Separation

    Vibration separates shell from meat, then a dedicated sorter removes any remaining shell and debris from the meat.

  5. 05 Cooling

    A water-cooling conveyor brings the meat down to handling temperature before packing.
